SCRAMBLED EGGS - GOOD TIP

REMEMBER THAT SCRAMBLED EGGS
CONTINUE TO COOK EVEN AFTER
BEING REMOVED FROM THE HEAT.
If you're anything like me, that will explain
why gently scrambled eggs sometimes peel away
from the bottom of the pan
like a strip of leatherette.
The trick is to take the pan away from the flame
just before the eggs are quite ready.
Then continue to stir the eggs until
the texture is right. Enjoy!
