GOURMET POTATO SALAD YOU CAN MAKE AT HOME


HAVE YOU BOUGHT POTATO SALAD THAT HAD POTATOES WHICH HAD NOT BEEN PROPERLY COOKED? OR THE MAYONNAISE TASTED SOMEWHAT STRANGE? OR THE POTATO SALAD JUST DID NOT TASTE NICE? WELL, HERE'S MY VERY OWN POTATO SALAD RECIPE. And everyone loves it!

Allergy Alert; If you are allergic to any of the ingredients, don't use this recipe.

Ingredients
Baby potatoes
Salt to taste
Low fat mayonnaise
Diced red onion
Diced white part of spring onions

Method;
Wash baby potatoes well.
Use as many as you will need, counting out extra potatoes for every person who will need a portion.
Don't peel the potatoes, unless there is a particular reason to.  
Boil water in a kettle.
Place the potatoes in a pot on the stove; put salt to taste in the water.
Boil the potatoes until they are soft inside.
[You can test the boiled softness of the potato by pricking them with a fork - be careful of the boiling water and the steam!]
When they are perfectly cooked, remove them from the heat and drain off the water.
Now turn the potatoes out into a container.
Cut the potatoes into smaller pieces with a fork or knife once they're in the container.
Immediately add the low fat mayonnaise to taste.
Add diced red onion to taste and also - here is the trick - diced spring onions [using only the white part of the spring onion, with the roots and base removed first].
Mix gently together, and leave to cool in the fridge. It is delicious. Suggestion; Eat with white ciabatta rolls and butter, and great music in the background.
